I’m always looking for a tasty gluten-free Chicken Panini, and yesterday’s lunch did not disappoint. Located in the heart of Escondido, CA off Grand Ave., EscoGelato is a cute little parlour/gelataria with a quaint community feel.

Fried chicken and summer picnics ~ such a delicious pairing. I’m not a huge fried food indulger, but twice a year I do get out the cast iron skillet and cook up some old-fashioned fried chicken, with plenty of leftovers for a day or two.

Searching for something sweet one afternoon in Overland Park, KS, I turned on my iPhone maps app and searched for ‘gluten free bakeries’. Only two blocks away (lucky me!), I drove to Gigi’s Cupcakes and the rest is history. I’m hooked. Gigi’s Cupcakes are the b e s t gluten-free cupcakes I’ve ever tasted. (Ok, I’ll say ‘yet’… however they’ve set the standards high).

Community of like-minded people plays such an important role in helping us stay on track, growing with new information, and overall support, in every aspect of life. For those of us following a gluten-free lifestyle, ‘community’ is made so easy with websites such as MeetUp.
According to www.meetup.com, they have 101 Meetup groups, in 86 cities, in 14 countries in existence today, with 7.041 people ‘interested’ and a huge 18,451 members across the globe – just for Celiac Disease!

Those of us with a gluten intolerance, or celiac disease, might already carry the visual in our heads of what our small intestines must look like, both before we quit eating gluten, and now that we follow a gluten-free lifestyle.
