Miss Princess ~ my favorite gluten-free cupcake at Gigi’s
Searching for something sweet one afternoon in Overland Park, KS, I turned on my iPhone maps app and searched for ‘gluten free bakeries’. Only two blocks away (lucky me!), I drove to Gigi’s Cupcakes and the rest is history. I’m hooked. Gigi’s Cupcakes are the b e s t gluten-free cupcakes I’ve ever tasted. (Ok, I’ll say ‘yet’… however they’ve set the standards high).

I love exploring new cities, visiting local iced tea shops (aka ‘coffee houses’), and walking around grocery stores I’ve never heard of. Last week I found Frazier Farms Market, and what a great find it was! With two locations in North County San Diego (Vista & Oceanside), stop in on your next drive ‘in the neighborhood’.

My delicious meal shared with my dad today ~ our Father’s Day panini bar lunch was a hit!
Holidays and eating pretty much go hand-in-hand. I used to wonder what I’d be able to eat when visiting other people’s homes for lunch and/or dinner, aside from what yummy gluten-free dish I’d bring. Today, it’s easy-peasy enjoying gluten-free get-togethers (especially when you hang out with some pretty good peeps – hey, birds of a feather! :o)).
More and more friends and family members are: hearing about gluten-free lifestyles, seeing the effects of their gluten-intolerant and celiac loved ones NOT following this lifestyle, and learning how easy it is to enjoy a safe, delicious holiday meal where everyone will enjoy the food. (Another reason I will continue to blog about it all, as so many have expressed their gratitude for the information – and ‘quirky’ writing style – I share with y’all.)

Birkholm’s Bakery ~ hands down bakes the BEST Sarah Bernhardt cookies in Solvang!
Spending the day in Solvang, CA is always a fun outing. Cute boutique shopping, wine tasting rooms, international cuisine, and Danish bakeries. It is the “Danish Capital of America” after all, and when in Copehagen, eat delicious Danish cookies!
I have taste-tested many gluten-free cookies over the past six years, and none are as delectable as Birkholm’s Bakery & Cafe’s Sarah Bernhardt cookies.

Often the best lunches are the ones you create yourself… and when you’re out, about,
and h – u – n – g – r – y, spotting a Whole Foods brings me such delight. They offer a full salad bar with fresh, organic vegetables to choose from, and carry various other grab-it-to-go/made-to-order lunch (breakfast/dinner) options.

Sooooooo happy my favorite ice cream is gluten-free!
June 7 is National Chocolate Ice Cream Day… who knew? Time to grab your Ben & Jerry’s chocolate fabulousness. My intuition is pretty great, as yesterday’s post was about using Glutino’s Gluten-free Table Crackers as the ultimate ice-cream-spoon-replacer when I indulge in this fantastic chocolateness of joy!
Easy peasy. Ben & Jerry’s delivers our gluten-free community with LOTS of great gluten-free options (Thank You Ben & Jerry!) and I’m happy to say New York Super Fudge Chunk is my most favorite flavor. I’ve reached out to them to ask about an updated gluten-free list… stay tuned!

Burger Bench’s ‘The Classic’ burger lettuce-wrapped, with delicious seasoned fries
Downtown Escondido, CA offers “a family-owned restaurant dedicated to offering fresh and local ingredients in a friendly environment” – and gluten-free burger buns! This casual burger eatery caught my eye while driving down Grand Avenue on my first visit to “Esco”, and the draw of the g-free bun pulled me in. Or was it the crowd? My gramps always said “go where it’s crowded – there’s good food there!” ;o).

The one month of the year Gluten Free With Wendi E. dishes out “30 posts in 30 days”!
Pourquoi?
Why not! This site is all about sharing information I’ve experienced with you, hoping it will either inspire you, nudge you, save you time, or save you money while we all figure out this “gluten-free” lifestyle together.
June is a great half way marker month. Take a moment to consider a few things, like:
- how you’re feeling
- what you’re eating
- how that exercise routine’s coming along
- how much water you’re enjoying each day
- how you’re looking when you pass a mirror (are you SMILING back at yourself???)

Delicious Sprinkles Cupcakes offers tasty, gluten-free options!

Sprinkles Cupcakes opened their first delicious bakery in Beverly Hills, CA 10 years ago, and as part of their anniversary celebration, TODAY ONLY they are giving each store visitor a free cupcake! Good news for those of us eating gluten-free, their signature red velvet cupcake (25 million red velvets sold to date!) also comes in a gluten-free version. It’s delicious!
