gluten-free chicken & stir-fry zucchini strips

Let’s talk chicken. I like chicken. Ok, I love chicken. How many varieties of chicken have you tried this year? In your lifetime? Let me suggest one more recipe to add to your collection. It’s simple, healthy, tasty and takes just about 30 minutes to create. Easy peasy.
Chicken & Stir-fry Zucchini Strips – ingredients:
- 4 chicken breasts
- 1 tablespoon extra virgin olive oil
- 1 large onion
- 3 zucchini’s (green and/or yellow)
- 1 tablespoon Tamari soy sauce
Pre-heat oven to 350*. Season chicken breasts with your favorite seasoning – I use Trader Joe’s Everyday Seasoning – and place in a shallow baking dish. Add approx. 1/4 cup liquid (water or chicken broth) to the dish to keep chicken moist while baking. Bake until center temperature reaches 165*, approx. 30 minutes. Use a meat thermometer – do not overcook! Keep your chicken juicy. Let stand a few minutes before cutting into strips on the diagonal.
While the chicken is baking, heat the olive oil in a large sauce pan over medium heat. Slice onion into 2-inch strips. Sauté onion for approx. 10 minutes, stirring occassionally, to caramelize. Add the zucchini strips and season with your favorite seasoning (you know mine!). Sauté the zucchini another 10 minutes.
Once the vegetables are to your liking (onions are clear, zucchini is tender), add the Tamari soy sauce to the pan. Sauté 3-5 minutes more, stirring together.
Plate the chicken and vegetables – enjoy!
