Old fashioned, flavorful gluten-free fried chicken

Fried chicken and summer picnics ~ such a delicious pairing. I’m not a huge fried food indulger, but twice a year I do get out the cast iron skillet and cook up some old-fashioned fried chicken, with plenty of leftovers for a day or two.
This recipe is so easy to make. Using different gluten-free flours is interesting. I’ve found making fried chicken with Pamela’s Gluten-free Baking & Pancake Mix adds the best flavor to this twice-a-year fry.
Fried Chicken Ingredients:
chicken pieces – as many as you’d like!
canola oil – enough to coat 1-inch of the skillet bottom
1 tablespoon Trader Joe’s Everyday Seasoning
1 1/2 cups Pamela’s Gluten-free Baking & Pancake Mix
1 teaspoon salt
1 teaspoon ground peppercorns
Heat a cast iron skillet with 1-inch canola oil over medium heat.
Sprinkle chicken with Trader Joe’s Everyday Seasoning. In a brown paper bag (like grandma used to use), add the Pamela’s mix, salt, and ground peppercorns. One by one, add a chicken piece to the bag, give it a good shake, and place the chicken in the cast iron skillet. Do not overcrowd the skillet, only add enough chicken to fill bottom of pan.
Cover the skillet with a splatter guard while cooking. Slowly turn the chicken 1/4 turn about every 8 minutes, making sure each side gets a good crisp to it. Use a meat thermometer to ‘temp check’ the chicken, and remove from the skillet when interior temp is 165*F. (Cooking times vary based on thickness of chicken meat).
Place fried chicken on paper towels to drain excess grease. Serve warm. Refrigerate any leftovers for another great meal tomorrow!
Craving some delicious gravy with your meal? Empty the cast iron skillet, leaving only about 2 tablespoons of oil, and fried chicken drippings. Add 2 tablespoons of Pamela’s Gluten-free Baking & Pancake Mix to the skillet. stirring constantly until brown, on medium low heat. Add approx. 2 cups milk, stirring constantly until gravy starts to bubble and thicken. Add salt and pepper to taste. Remove from heat.

I am looking for anyone who has a package of La Pasta di Francesca Tagliolini egg noodles to send a picture of the UPC code. Hi Jeannie – I believe I purchased my La Pasta di Francesca Tagliolini egg noodles in the ‘Cost Plus World Market’ section of a large Bed, Bath & Beyond store in West Los Angeles (on Olympic Blvd.) in California. You can try either of those stores if they are nearby, or willing to help via phone. The product website http://www.lapastadifrancesca.com/products.html has a US distributor listed at the bottom (MV FOOD LLC) with email and phone information, so that could be an option as well.
